Parmesan Tomatoes Recipe

If you have an over abundance of those beautiful summer tomatoes here’s a delicious little recipe to transform them into a gorgeous side!

We thought they’d even be a great addition to a BLT!

We sliced the tomatoes…

I used a method i learned from Paula Deen by putting them on paper towels and salting them a bit…

leave them there 15 min or so to remove excess liquid…

mix the parmesan topping and place equally on each slice…

bake for 15 minutes on 350 degrees…

then turn the oven to broil and cook till browned and bubbly…

Parmesan Tomatoes Recipe

Ingredients

Scale
  • 2 large tomatoes, sliced
  • Salt and pepper each slice a bit
  • 3/4 cup mayo
  • 1/2 cup Parmesan cheese
  • 1/2 cup panko breadcrumbs
  • 1/2 cup Italian breadcrumbs
  • 1 TBSP parsley

Instructions

Slice the tomatoes. Salt and pepper each one a bit and drain on paper towels about 15 minutes to eliminate excess liquid.

Mix the Parmesan topping ingredients.

Place the tomatoes on your baking sheet and top equally with the Parmesan mixture.

Bake on 350 degrees for 15 minutes then turn the oven to broil and cook until topping is browned and bubbly.
