Parmesan Tomatoes Recipe


  • 2 large tomatoes, sliced
  • Salt and pepper each slice a bit
  • 3/4 cup mayo
  • 1/2 cup Parmesan cheese
  • 1/2 cup panko breadcrumbs
  • 1/2 cup Italian breadcrumbs
  • 1 TBSP parsley


Slice the tomatoes. Salt and pepper each one a bit and drain on paper towels about 15 minutes to eliminate excess liquid.

Mix the Parmesan topping ingredients.

Place the tomatoes on your baking sheet and top equally with the Parmesan mixture.

Bake on 350 degrees for 15 minutes then turn the oven to broil and cook until topping is browned and bubbly.
