I think I’ve told you before of my love for eggplant!
I had picked up a couple the other day and created this wonderful dinner skillet that was ready in a flash!
My son, Daniel, even agreed that it was better than traditional lasagna…let’s see what you think!
Let’s get started!
Preheat your oven to 325 degrees.
Peel and dice your eggplants; dice your onion.
In your skillet, saute’ the eggplant and onion in the olive oil until tender; add the oregano and minced garlic.
If your skillet is oven-proof, you can spread out the veggies to the edges to make the first layer–
if it’s not oven-proof, pour the veggies into a casserole dish.
Sprinkle Italian, breadcrumbs and parsley over the eggplant.
Now add the sauce.
Spread Mozzarella cheese over next.
Bake for 30 minutes until hot and bubbly.

- 2 TBSP Olive Oil
- 2 medium eggplants, peeled and diced
- 1/2 onion, diced
- 2 garlic cloves, minced
- 1 tsp oregano
- 1 cup grated Italian Blend Shredded Cheese
- 1/2 cup Italian Bread Crumbs
- 1 tsp parsley, chopped
- 2 cups spaghetti sauce, spaghetti with meat sauce or your favorite marinara…I used my favorite recipe for my friend’s sauce here http://bit.ly/1HLgd1F
- 1 1/2 cups mozzarella cheese, shredded
Instructions

Heat olive oil in large skillet over medium high heat. Add the chopped eggplant, onions, oregano and garlic.
Cook and stir until lightly browned. Spread out in bottom of skillet.
