Cheesy Eggplant Skillet Recipe

Ingredients

  • 2 TBSP Olive Oil
  • 2 medium eggplants, peeled and diced
  • 1/2 onion, diced
  • 2 garlic cloves, minced
  • 1 tsp oregano
  • 1 cup grated Italian Blend Shredded Cheese
  • 1/2 cup Italian Bread Crumbs
  • 1 tsp parsley, chopped
  • 2 cups spaghetti sauce, spaghetti with meat sauce or your favorite marinara…I used my favorite recipe for my friend’s sauce here http://bit.ly/1HLgd1F
  • 1 1/2 cups mozzarella cheese, shredded

Instructions

Preheat oven to 325 degrees.

Heat olive oil in large skillet over medium high heat. Add the chopped eggplant, onions, oregano and garlic.

Cook and stir until lightly browned. Spread out in bottom of skillet.

Sprinkle Italian, breadcrumbs and parsley over the eggplant. Now add the sauce.

Spread Mozzarella cheese over next. Bake for 30 minutes until hot and bubbly.

 

Preheat your oven to 325 degrees.

Peel and dice your eggplants; dice your onion.

In your skillet, saute’ the eggplant and onion in the olive oil until tender; add the oregano and minced garlic.
