Instant Pot Quick & Easy Chicken & Dumplings Recipe

One of my very favorite comfort foods is my mamma’s Chicken & Dumplings…

I sit and watch her make them during the holidays…trying to memorize every little move she makes with the dough…but when I try my hand at them, mine never had the same amazing taste and texture…

Until I experimented with my favorite dough and my favorite new cooking apparatus!

They were quick, painless…there was no flour to clean up–

(which always was the case when I made them from scratch!)

And the best part… Mama said they were extremely delicious!

It all starts with these amazing

Puff Pastry Sheets & your Instant Pot!

Unroll one of the pastry sheets on a cutting board…

you don’t even have to use flour…

they don’t stick at all!

They’re pretty thin already,

but I rolled them just a bit more…

I could not find my rolling pin…

but a glass did just the trick!

Next, grab your pizza cutter

and cut the dough into

perfect little dumpling strips…

 

they will be perfectly beautiful like this!

 

Turn the Instant Pot to the saute’ setting…

add the chicken broth..

When the broth begins to simmer,

drop the dumplings in one by one…

Add the shredded chicken…

Turn the saute’ setting off…

Place the lid on to seal…

Set on high pressure for 5 minutes…

Allow the Instant Pot to natural release…

When the lid is removed and you gaze inside…

THIS will be staring back at you!

I added a bit of salt and a generous

amount of pepper!

Give them a gentle stir…

Ladle a serving in your favorite bowl…

Enjoy!

Instant Pot Quick & Easy Chicken & Dumplings Recipe

Ingredients

Scale
  • 1 pkg Puff Pastry Sheets
  • 1 Rotisserie Chicken, chopped or shredded, discarding skin
  • 2–32oz chicken broth
  • Salt & pepper to taste

Instructions

Roll out the puff pastry dough on your cutting board.

Cut the dough in strips with your pizza cutter.

Turn your Instant Pot on Saute’ and add the chicken stock.

When the stock is simmering, begin dropping the dough strips in until all are used.

Now turn saute’ feature off. Add the shredded chicken.

Place lid on pot and set to seal, high pressure, 5 minutes.

Allow the Instant Pot to natural release.

Remove the lid, ladle in bowls and enjoy.
