Instant Pot Easy Chicken & Sausage Jambalaya Recipe

This has always been one of our favorite meals!

With the Instant Pot and a few quick ingredients from the grocery store…dinner is served in no time flat!

Set the Instant Pot feature to “sauté “…

I picked up the already diced ingredients in the produce aisle and poured them in along with the olive oil…

After about 10 minutes add the sausage…Stir and cook another 5 minutes…

Add 1 TBSP of the seasoning for a mild Cajun flavor

or 2 TBSP to kick it up a notch!

Add the broth, chicken and rice and give everything a bit of a stir…

Secure the lid and set the valve to “sealing”…

select the”rice” feature…

When cooking time is up, set the valve to “venting”, carefully remove the lid and stir…

Serve and enjoy!

Instant Pot Easy Chicken & Sausage Jambalaya Recipe

Ingredients

Scale
  • 1 rotisserie chicken, shredded
  • 2–32oz containers chicken broth
  • 2 cups diced onions
  • 2 cups diced celery
  • 2 cups diced sweet peppers
  • 2 cups rice
  • 1 lb Hillshire Farm Sausage, diced
  • 1–2 TBSP Tony Chachere’s Cajun Seasoning
  • 1/4 cup olive oil

Instructions

Set your instant pot on sauté .

Add the onions, celery, peppers and olive oil to the pot; sauté for about 10 minutes, stirring occasionally.

Add the sausage and the seasoning and sauté another 5 minutes.

Pour in the chicken broth; add the diced chicken and rice.

Place the lid on the pot and set the valve to seal.

Press the “rice” feature to begin cooking.

When cooking time is up, turn the valve to “venting” carefully and allow steam to release.

Remove lid, stir and serve.
