Amy’s Baked Taquitos Recipe

One of the dishes we had for our family Christmas Party dinner this past year were these incredible Taquitos our Amy made for us!

They’ve quickly become one of our very favorite weekly rotation recipes!

In your large skillet, add the cream cheese, chili powder and cumin…

look at that Salsa Verde just waiting to join!

Add the Salsa Verde…shredded cheese and cilantro…

Now add your shredded chicken…

melt and stir all over low heat until thoroughly mixed…

Place a void amount into each tortilla…

roll up and place side by side,seam side down on your baking sheet…

Melt 2 TBSP butter and add 2 TBSP olive oil…

brush each tortilla roll thoroughly with the mixture…

Bake on 425 degrees for 18-20 minutes…

We served ours with extra Salsa Verde and Mexican Cream!

Amy’s Baked Taquitos Recipe

Ingredients

  • 2 1/2 cups cooked, shredded chicken breast
  • 12 large flour tortillas
  • 1/2 cup chopped onion
  • 1 clove garlic minced
  • 1/2 cup salsa verde
  • 8 oz cream cheese
  • 1 TBSP Mexican chili powder
  • 1 TBSP cumin
  • 1 tsp paprika
  • 1/4 cup fresh lime juice
  • 1/4 cup chopped cilantro
  • 2 cups shredded Mexican cheese
  • 2 TBSP OIL + 2 TBSP melted butter

Instructions

Preheat oven to 425 degrees.

Place 2 TBSP oil in large skillet and add the chopped onions; Saute’ 3-4 minutes until soft.

Turn the heat to low and add the cream cheese, Salsa Verde, lime juice, seasonings, chicken,cilantro and cheese.

Stir and melt together until all combined.

Place about 1/4 cup mixture on each tortilla beginning 1 inch from one side; tightly roll up.

Place on baking sheet a bit apart for even baking.

Melt the butter and oil together and brush on each tortilla.

Bake on 425 degrees for 18-20 minutes until brown and crispy.

Serve with your favorite topping.
