Toffee Pecan Pie Recipe

Is there anything better than a pecan pie??  
Well, I think I may have found the answer this week…
A Toffee Pecan Pie!
The toffee pieces just give a little twist to 
an already delectable dessert 🙂


Toffee Pecan Pie

1 pre-made pie crust (I love Pillsbury!)
3 eggs
1/2 cup sugar
1/2 cup corn syrup
1 tsp vanilla
1/2 stick butter, melted
2 cups pecans, chopped
1 cup toffee bits

Preheat oven to 350 degrees.  

Place crust in your pie dish.  
Pour pecans and then toffee bits in crust.  In a large bowl, melt the butter and add 
the sugar, corn syrup, vanilla; stir. 

Beat the eggs well with a fork and pour 
into the corn syrup mixture.  

Pour over the pecans and toffee in the crust.  
Bake 45 minutes and place on rack to cool.

Slap that pie crust in the pan…
pour in the pecans and toffee pieces…
 
 
Mix them up a little like this…
 

In a large bowl, melt the butter and add the Karo syrup–
I know, I know…I don’t like to measure…
I’m very sure there’s a cup left in the bottle 🙂
 
 
Add the sugar…

 
and vanilla…
this is a new “butter vanilla” I found…yum!!
 
 
In a separate bowl, beat the eggs a bit…
 

Stir them into the syrup mixture until it’s all well combined…

 
Pour the ooey gooey  filling over the pecan mixture..
 
 
It is now just waiting to be baked in 
a 350 degree oven for 45 minutes…
 

It smells divine and boy was it good!  
No left overs brought home from work…
I’m planning to bake another one for home this week 🙂
