Rolo & Oatmeal Cookie Bar Recipe

If you can make it home with a bag of the new little Rolo Minis, you need to make these cookie bars!
Amazing and oozing with chocolate and caramel goodness…Yum!

The delicious ingredients…

Cream together the brown sugar, butter and eggs…

Add the vanilla…

the dry ingredients…

and the oatmeal…

and the whipping cream…

when all combined, stir in the Rolo Minis…

Spread in your 9 x 13 baker that is lined with parchment paper…

Bake on 375 degrees for 20-25 minutes…

After letting the cookie bars cool for 10 minutes, lift the cookies out by the paper and cut them into squares…

Rolo & Oatmeal Cookie Bar Recipe

Ingredients

Scale
  • 1 cup butter, room temperature
  • 1 1/4 cups brown sugar
  • 2 eggs
  • 2 TBSP heavy cream
  • 2 tsp vanilla
  • 1 3/4 cup all purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2 1/2 cups old fashioned oats
  • 1 cup semisweet chocolate chips
  • 1–8oz bag Rolo Minis

Instructions

Preheat oven to 375º F. Prepare a 9×13 baking dish by lining it with parchment paper.

With your mixer, combine the butter, brown sugar, and eggs.

Mix in the milk, vanilla, flour, baking soda, salt, and oats.

Stir in the chocolate chips and Rolo Minis.

Spread the dough in the prepared baking dish and bake 20-25 minutes.

Allow to cool for at least 10 minutes before cutting.
