Skillet Queso Fundido Dip Recipe

The best food is sometimes cooked and served in skillets!  This recipe is no exception!  This dip has a real depth of flavors from the veggies to the sausage to the melted cheese…total yumminess for the holidays or anytime you need some comfort food quick!

I love the way it looks in an iron skillet but you can also use a crock pot…

First cook the sausage, drain and set aside…

in the same pan, add the butter and oil…saute’ the chopped peppers and onions about 5-6 minutes until soft…

Place 1/2 the sausage…

1/2 the peppers and onions…

1/2 the cheese and repeat…

Place in 400 degree oven for 15 minutes until cheese is all gooey…

Then add 1- 1 1/2 cups prepared pico on top…

i get mine in the fresh veggie section in Walmart

or you can make your own…

Chop a couple of TBSP cilantro and sprinkle on top…

enjoy with your favorite chips!

Skillet Queso Fundido Dip Recipe

Ingredients

Scale
  • 1 roll sausage of your choice
  • 1 chopped onion
  • 2 cups chopped red bell peppers
  • 2 TBSP butter
  • 2 TBSP OLIVE oil
  • 8 oz Monterrey Jack cheese
  • 8 oz mozzarella cheese
  • 4 oz shredded Mexican cheese
  • 1 – 1 1/2 cups pico
  • 2 TBSP cilantro

Instructions

Cook sausage, drain and set aside.

In same pan, add butter and oil.

Saute’ onions and peppers about 5 minutes; drain.

In your skillet, layer 1/2 the sausage…1/2 the onions and peppers…1/2 cheeses; then layer again.

Place in 400 degree oven for 15 minutes until the cheese is all melted and gooey. Remove from oven.

Spread the pico over the top and sprinkle with chopped cilantro.
