Ingredients
- 4–5 potatoes of your choice, cut into chunks
- 1/4 cup olive oil
- 2 TBSP taco seasoning
- Toppings: Salsa, Sour Cream, Green Onions, Shredded Cheese
Instructions
Place the potato chunks in a large bowl.
Drizzle the olive oil over the potatoes and add the taco seasoning; stir until the potatoes are coated well with the mixture.
Pour the potatoes on a baking sheet sprayed with nonstick spray.
Place in your preheated, 400 degree oven. Bake about 45 minutes, stirring at 15 minute intervals. The potatoes will be crispy yet soft when they’re done.
Place a serving on each plate and top with shredded cheese, salsa, sour cream and green onions.
