We don’t fry much in our home, but when we do, pork chops has to be one of my favorites!
I created these to go with that yummy Southwest Pasta salad I posted earlier in the week…easy and delish!
First you will want to marinate the pork chops in this yummy marinade…
Combine the mayo, lime juice, cumin, Mexican Chili powder, garlic salt, and diced jalapenos out of the jar…
I also mixed my Panko with 2 tsp cumin and 2 tsp Mexican chili powder and 1 tsp garlic salt…
Roll the chops in the seasoned Panko…
Place the chops in the hot oil…
Turn when you see they’re getting brown on the edges…
Drain on a wire rack…
Sprinkle with some parsley for some beautiful color…
We enjoyed them with some delish roasted corn with Mexican Spiced Butter,
Mexican Riceand that wonderful Southwest Pasta Salad!

Ingredients
- 4–6 boneless pork chops
- 1/2 cup mayo
- 1 tsp garlic salt
- 1 tsp cumin
- 1 tsp Mexican chili powder
- 1/3 cup lime juice
- 2 tbsp diced jalapenos and juice out of a jar
- Breading:
- 2 cups Panko
- 2 tsp Mexican chili powder
- 2 tsp cumin
- 1 tsp garlic salt
- Oil for frying
Instructions
Marinate the chops at least an hour or 2 in the refrigerator by combining the mayo, lime juice, seasonings and jalapenos and pouring over the chops in a ziploc bag.
Pour about an inch of oil in your frying pan. Heat to medium high.
Make the breading by combining the Panko and seasonings.
Roll each pork chop completely in the breading until every bit is covered.
Place the chops in the hot oil. Turn when you see the bottom edges brown. Fry a few more minutes until done.
Drain on a wire rack. Sprinkle with parsley for beautiful color before serving.
