Lisa’s Cajun Parmesan Orzo & Chicken Stuffed Peppers Recipe

One of my very favorite recipes from childhood is stuffed peppers.
Of course, I cook them the basic way with ground beef, rice, tomatoes and cheese.
But when I saw this idea for a stuffed pepper with orzo and chicken,
I knew I just had to add my own twist and come up with a new dish for dinner!

The delish ingredients…..

Prepare your peppers and put them in your baking dish…

Chop the good stuff from the tops and place in a bowl…

Add the chicken breast…

In your saucepan, heat butter and olive oil over medium-high heat until butter is melted…

Add flour and cook for several minutes…
Slowly add milk while whisking for several more minutes…

After the mixture is simmering, pour ¼ cup into a bowl with the three egg yolks and whisk…whisk…whisk…
Now pour that mixture back into the large pot and whisk…whisk…whisk…

Add the Parmesan Cheese…stir well and then remove from heat…

Add the  cubed chicken and diced peppers into the Parmesan sauce….

Stir in the cooked and drained orzo…

Sprinkle more Parmesan on top…

Bake at 400 degrees 35-40 minutes…

But Wait!!!
Here’s Part 2 of this amazing Recipe!
I had a lot of the filling left over and really didn’t want more stuffed peppers…
So…
I put the filling in 4 individual casserole dishes and added some French’s Fried Onions…

Put foil over them and bake at 350 degrees for 20 minutes…
Remove the foil and bake and additional 5 minutes until the onions are crisp and brown…
It has turned into one of our favorite new casseroles!!
