Hummingbird Cake Recipe

This is one of my very favorite cakes that my Momma and Granny made many times when I was growing up!

I made it recently for a friend for Easter and she was delighted…

Hope you will be too!

[method]

Let’s get started…

Gather these crazy number of ingredients…

With your mixer, combine the stick of butter, oil and sugar…

Beat the ingredients about 3 minutes and it will be creamy and pale like this…

Add the eggs one at a time until the mixture turns a pale yellow…

Drain your pineapple…

To the batter, add the pineapple, bananas, coconut and nuts…

Then the dry ingredients…

Pour into 3 …9 inch cake pans sprayed with nonstick baking spray…

Bake 35-40 minutes or until toothpick tests clean…

After cooling completely, make the frosting by creaming the butter and cream cheese…

add the confectioners sugar 1 cup at a time, scraping the sides of the bowl…

add the vanilla and make sure it’s all mixed well…

Spread on each layer and then on the sides…

I wanted to give the cake a special topping, so I melted some White Ghirardelli Chocolate …

sprinkled on some tropical trail mix that included dried bananas…

I then let them set completely…

I toasted some coconut and pecans for the top of the cake

and then decorated with the white chocolate discs…

Simply gorgeous!
