Creamy Tomato And Spinach Pasta Recipe

I was craving some pasta with a creamy tomato sauce and a recipe to use my fresh baby spinach in…
Something beautiful was created!

Let’s get started!
 
Saute’ the onions and garlic…

Add the petite diced tomatoes…

The cheeses and the half & half…

When it’s all melted and creamy, add the baby spinach…

Pour in the cooked pasta…

You have an amazing meal in itself or you can add some roasted chicken as well!

Creamy Tomato And Spinach Pasta Recipe

Ingredients

Scale
  • 1 Tbsp olive oil
  • 1 small onion
  • 2 cloves garlic
  • 1 (15 oz.) can petite diced tomatoes
  • ½ tsp dried oregano
  • ½ tsp dried basil
  • pinch red pepper flakes
  • freshly cracked pepper to taste
  • ½ tsp salt
  • 2 oz. cream cheese
  • ¼ cup grated Mozzarella
  • ½ lb. penne pasta
  • 4 oz fresh spinach
  • 1/3 cup half and half
  • add grilled chicken breast for extra lean protein

Instructions

Cook pasta until tender, 8 minutes; drain.

Dice the onion and mince the garlic. Cook both in a large skillet with the olive oil over medium-low heat until softened and transparent, about 5 minutes.

Add the diced tomatoes, oregano, basil, red pepper flakes, salt, and some freshly cracked pepper to the skillet with the onions and garlic. Stir to combine.

Turn the heat down to low. Cut the cream cheese into a few pieces and then add them to the skillet with the mozzarella cheese and the half and half.

Use a whisk to stir the sauce until the cream cheese has fully melted in and the sauce is creamy.

Add the fresh spinach and gently stir it into the sauce until it has wilted, 3-5 minutes.

Add the pasta and stir until all coated with the creamy sauce.
