I was needing a new breakfast casserole idea and my Jessica sent me a picture of a yummy burrito she made with the Conecuh Sausage I mailed to her…and boom!
This delicious idea was born!
If you’ve never tried Conecuh sausage or if they don’t carry it in your area, you have to check out their site!
I have found their great new seasonings and they enhance everything I’ve added them to!
Their processing store is just about an hour away from me and I’m hoping to visit soon to see how the magic is made!

In your large skillet,
add the oil, veggies and sausage…
fry up that yummy goodness
for about 10 minutes or so…
drain in a colander
to remove
the excess grease…
Add a few tablespoons of the
mixture down the center
of each tortilla…
toss on some of the
yummy cheese…
roll each tortilla up
and snuggle them close
in your baking dish…
I used an 8×8…
Whisk the eggs with the heavy cream…
season with the salt and pepper
and pour over the tortillas…
Oh, they will soak up that
rich goodness like this!
Add the remaining cup of cheese…
or more..
just listen to your heart on this one…
my heart has never failed me
on cheese addition to my recipes… wink…wink!
Bake on 350 degrees for 20-25 minutes…
the burritos will be perfect and the cheese
will be gooey and slightly brown…
Cut each serving into squares
and add any of your favorite
toppings…pico, salsa, hot sauce…
My son had some of this Hippy Dippy Green Sauce from the Angry Goat Pepper Co. that took them straight over the edge!!
I added some beautiful slices of Cara Cara Oranges and served up this incredible feast!

Ingredients
- 1/2 lb Conecuh sausage, diced
- 1 onion, diced
- 1 cup diced sweet peppers
- 2 cups shredded Mexican cheese
- 6–8 tortillas
- 6 eggs
- 1 cup heavy cream
- 1/2 tsp salt & 1/2 tsp pepper
- Optional toppings…Pico, Salsa, Hot Sauce
Instructions
In a large skillet, add 1/4 cup oil, the chopped veggies and the diced Conecuh Sausage.
Saute’ for 10 minutes until the veggies and sausage are cooked well; drain in a colander.
Spoon a few tablespoons of the meat mixture down each tortilla; add some of the shredded cheese next.
Roll up each tortilla and place seam side down in your baking dish, side by side.
Next whisk the eggs with the heavy cream; add the salt and pepper. and pour over the tortillas.
Add the remaining cup of shredded cheese; bake on 350 degrees for 20-25 minutes until the cheese is melted and slightly brown.
Cut into wedges and top with your favorite pico, salsa or hot sauce…or all three!
Serve and enjoy!
