I made two versions of this delicious cake for a friend’s birthday and my son, Christopher’s Birthday recently…
The cake is rich with the espresso and Kahlua…and the filling is just divine!
Christopher’s friends asked if I could just sell the filling in little buckets!

Make the cake according to directions and set aside to cool…
Prepare the filling by whipping the cream like this…
Then whip the cream cheese and confectioner’s sugar…
Mix together the whipping cream, cream cheese mixture and the crushed Oreos…
Set aside 1 1/2 cups the Oreo filling and then pile the rest onto the bottom layer…
Smooth it out evenly and place the 2nd layer on next…
Meanwhile, make the ganache by combining the heavy cream and the chocolate chips over low heat…
Until it’s melted and creamy like this…
After it cools a bit, pour it over the cake…
It will run down the sides and look amazing like this!
When it cools completely, pipe the swirls on the cake like this…
As many or as little as you like…
And I added tiny ones around the bottom as well…
Amazing!
I then topped it with mini chocolate chips and a bit more ganache…
Delicious!
For my Christopher’s Birthday, as he does not care for ganache…
I used the newly discovered Cool Whip Chocolate Frosting instead…
I then added the mini Oreos and a bit of crushed Oreos and chocolate sprinkles…
He and his team at work simply loved it!
