Italian Sausage & Lentil Soup Recipe

I cook this soup a lot!

It’s hearty, it’s easy and I feel like it’s just a great big hug in a bowl!

This is the first time I have made it in my Instant Po t– which is my new kitchen gadget love!

It’s also a great slow-cooker recipe.

Saute’ the Italian Sausage, onion, celery and carrots until meat is brown…

Drain and add to your Instant Pot or slow cooker…

Add the pound of lentils…

Pour in all the broth…

I used 2 quarts of vegetable broth and 1 quart of chicken broth…

Add the salt, pepper and cayenne …

Now put the lid on your Instant Pot and press the “soup” button like so…

30 minutes to a fantastic meal!!

After releasing the pressure on the Instant Pot, your soup will look steamy, hot and just amazing like this!

Enjoy!!

*If I use my slow-cooker, I set it on low for 8 hours*

Italian Sausage & Lentil Soup Recipe

Ingredients

Scale
  • 1 lb ground Italian sausage
  • 2 celery stalks
  • 2 cups baby carrots
  • 1 onion
  • 4 cloves garlic, minced
  • 2–1 qt containers vegetable broth
  • 1 qt chicken broth
  • 1 lb lentils
  • 1 tsp each salt, pepper and cayenne
  • 1/4 cup olive oil

Instructions

If you are cooking in your Instant Pot, it does have a sauté option, but because I am sautéing the meat and veggies together, I still like to use a large skillet.

In your food processor, add the onion, carrots and celery and chop small.

In your skillet, add the olive oil, Italian Sausage, chopped vegetables and garlic.

Cook over medium-low heat until sausage is done and vegetables are soft; drain.

Pour meat and vegetables into the Instant Pot or into your slow-cooker.

Add the lentils and the broth.

Pour in the spices next.

Cover with the Instant Pot lid, set to seal, and press the Soup option; 30 minutes cooking time will appear.

If you’re using a slow-cooker, set it on low for 8 hours.

When the timer is clear, release the steam, open the lid and ladle soup into individual bowls.
