Cowboy Casserole Recipe

We were watching one of our favorite movies, 
“Open Range” the other night. 
My favorite line in the whole movie is at the end when 
Kevin Costner looks at Annette Benning and says, 
“How is this gonna work if you won’t do what I tell you.”  
The sweet mechanic and I looked at each other and laughed 🙂  
“You poor guys must silently wonder this all the time!”  I said. 
 We’re just so confusing and mysterious 🙂  
Anyway, to celebrate one of my favorite categories–
Cowboys and Westerns, I’m sharing a delicious recipe today.  
The cowboy or cowgirl in your life will love it!

Cowboy Casserole
 
2 pounds ground beef, cooked and drained
1 pkg taco seasoning
4 ounces sour cream
4 ounces mayonnaise
8 ounces Mexican Blend shredded cheese
1/2 cup shredded Mexican Blend shredded cheese for topping
1 onion, diced
2 cups biscuit mix
2 tomatoes, diced
1 green bell pepper, diced
3 – 4 TBSP chopped jalapeno peppers
Heat oven to 325 degrees. 
Brown ground beef and add taco seasoning and 3/4 cup water.
  Mix well and set aside.  
Next, combine sour cream, mayonnaise 
and shredded cheese; set aside.  
 
In another bowl, combine biscuit mix and 2/3 cup milk.  
Mix well until you have a soft dough.  
Pat on the bottom of a 9×13 pan (sprayed with PAM) 
and a little up the sides, forming your crust.  
 
Saute’ the onions and peppers in a little olive oil until tender. 
 
Assemble in this order:  
On the crust, top with the ground beef, tomatoes, peppers and onions, the sour cream mixture and the remaining shredded cheese. 
 
Bake 30-40 minutes until edges of dough is lightly browned. 

 ******************************************************

 The yummiest of ingredients:  
 
Brown that beautiful ground beef and drain,
Add the taco mix and water, mix well and set aside.  
 
 Mix the mayo, sour cream and 8 oz of the  shredded cheese…
It will look creamy like this!  
 
Saute’ the chopped peppers and onions in a little olive oil…
 Like this!
 
  Mix the Bisquick with the milk…
 
Until you have a soft dough…
Press it in your 9×13 pan that you have sprayed 
with nonstick cooking spray…
Like this! 
The fun assembly part:  
Ground beef mixture first…
Diced tomatoes next.
 
The peppers and onions…
The jalapeno peppers…
Isn’t it beautiful!  🙂
But there’s more!!!
Top with the sour cream mixture…
And spread it out and top with the remaining shredded cheese…
Bake at 325 degrees for 30-40 minutes.  
Enjoy the cheesy, yummy goodness!
