On Christmas Day this year, we had a Pajama Brunch at my bestest friend, Suzie’s house.
So much amazing food, but these egg rolls were unlike anything I’ve ever had!

In a very large bowl,combine the shredded chicken…
The celery…onion…green onions…
the mushrooms…
the bamboo shoots, the bean sprouts, the water chestnuts and the soy sauce…
the seasoning…
the minced garlic…and mix it all up very well…
Put a couple of tablespoons of the filling in the egg roll wrapper…
Roll and seal the edges with water…
This filling made about 32 egg rolls…
The filling ingredients are already done, so you will fry the egg rolls
until the wrapper is brown and crispy, about 5-7 minutes…
They will made an incredibly delicious meal like this!
** Suzie’s original recipe had 4 scrambled eggs in the filling also, which was absolutely yummy!
Because I’m developing this recipe for catering, I didn’t add them to this batch,
as I was unsure that they’d freeze well in the filling.**
