Doritos Chicken Casserole Recipe

Around holiday time, sometimes it’s good to have an easy back-up recipe that you can make in a pinch!
This is one of my favorites!

In a large bowl, combine your shredded chicken, cream of chicken soup and Rotel…

the sour cream and milk…

and 1/2 the shredded cheese…

stir until all combined…

I crushed up the bag of Doritos and poured half of them into my baking dish…

Spoon the chicken mixture on next…

then the remainder of the Doritos and the remaining cheese…

It will look amazing like this!

Bake on 350 degrees for 35 minutes until it’s all hot and bubbly…

It’s most delicious like it is, but I love adding a dollop of sour cream and chopped tomatoes.

Doritos Chicken Casserole Recipe

Ingredients

Scale
  • 1 bag Nacho Doritos, crushed.
  • 2C cooked, shredded chicken
  • 2C shredded cheese–or more (I always use more!!)
  • 1 Can Cream of chicken soup
  • 1 Can Rotel tomatoes
  • 1/2C sour cream
  • 1/2C milk
  • 1 package taco seasoning

Instructions

Preheat your oven to 350. Spray a 2 quart casserole dish with nonstick spray.

Mix together all ingredients except the Doritos.

Layer half the Doritos (about 2 cups) on the bottom, then spread half the chicken mixture, rest of the Doritos, and the rest of the chicken mixture. Add more cheese on top.

Cover with foil and bake for 35 minutes.
