Lisa’s Tex-Mex Pasta Salad Recipe

  • 16 oz box Rotini pasta, cooked and drained
  • 15 oz can black beans, rinsed and drained
  • 4 oz can chopped green chilies
  • 1 can Mexi-corn, drained
  • 3 green onions, sliced
  • 1/3 cup minced fresh cilantro
  • 1 cup shredded Mexican cheesee
  • Dressing:
  • 1/2 cup olive oil
  • juice of 2 limes
  • 1 pkg taco seasoning, any kind
  • 1 tsp cumin
  • 1 tsp Mexican chili powder

Instructions

Combine all the veggies in a large bowl. Mix dressing ingredients and pour over the veggies; stir well. Refrigerate a couple of hours or overnight.
