Baked Parmesan Squash Recipe


  • 4 cups thinly sliced yellow summer squash
  • 3 TBSP olive oil
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/8 tsp cayenne
  • Breading:
  • 1 cup panko bread crumbs
  • 1 cup Italian bread crumbs
  • 3/4 cup grated Parmesan Cheese
  • 1/2 tsp Morton’s Natures Seasoning


Preheat oven to 450 degrees.

Place squash in large bowl.

Add oil and seasonings; toss to coat.

In baggie, add Italian bread crumbs, Panko, Parmesan cheese and Morton’s; mix to combine

Place squash in baggie and shake until each piece of squash is covered with the breading mixture.

Place in a single layer on a baking sheet.

Bake uncovered for 25-30 minutes, or until the squash is to your desired doneness and shade of light brown.
