I think I’ve told you before of my love for eggplant!
I had picked up a couple the other day and created this wonderful dinner skillet that was ready in a flash!
My son, Daniel, even agreed that it was better than traditional lasagna…let’s see what you think!

Let’s get started!
Saute’ the onion with the butter…
Add the spices…
the cream cheese…
the cream of chicken soup…
the Rotel…
Next..add the shredded chicken breast…
and 1 cup of the shredded cheese…
Pour into your casserole dish and top with the remaining cup of shredded cheese…
Bake on 400 degrees for 15 minutes until hot and bubbly!
I served mine with a side of sour cream, salsa and tortilla chips!

We’ve been eating a lot of fresh veggies lately including zucchini…
It’s always just “ok” to me…but then,
I stumbled on this delicious recipe that completely transforms it!

 Let’s get started!
In your skillet, add the butter and garlic…
Cook for about a minute…careful to not burn…
Add the sliced zucchini and carefully continue to turn them over as they brown slightly…
When they look perfect like this…
Add the lemon juice–fresh if you have it–from the bottle if not!
and the thyme…
and some salt and pepper…
Sprinkle the Parmesan on next…
Oh my!
I think it’s gonna be a new favorite for you too!
