Have I ever old you that since the beginning,
my life with my daughter has never been dull?
When she came home this December,
she purchased a truck she was going to drive back to Los Angeles.
She has made this trip a few times in the last 4 or so years, but
it gets no easier for her and no less wearing on the nerves for me.
On the night before she left, I did accompany her to
Walmart to pick up her supplies:
water, a couple of energy drinks, beef jerky,
and duct tape–of course!
I thought, “This is all one needs for a 30 hour trip!”
“Duct tape?” I inquire.
“Yes, to tape the blackout paper to the windshield so that
I can sleep in the truck when I get tired. I have to make it back by Christmas morning.”
“Jessica,” I sigh, “this is yet another thing your mother
does not ever want to hear.”
Well, this week, we traveled to Orlando to spend some time with Paige and Daniel after Paige’s graduation from USF–yea Paige!!!
We all had a great time,
ate some great food,
Yes, children, I will always take pictures of our pretty food and continue to embarrass you forever…

We visited Sea World…
Sharing with you today an easy recipe I’ve had in my
collection for a while for Pasta Carbonara.
I’ve always wanted to make it and was so glad I finally did!
It’s quick and yummy and a great comfort food.
I hope you enjoy!
Start with these yummy ingredients:
1/2 pound angel hair pasta
1/4 cup olive oil
1/4 lb bacon, chopped
5 garlic cloves, choopped
1/2 cup dry white wine
2 large eggs
1/2 cup shredded Parmesan cheese
1/2 tsp pepper
1/4 tsp salt
Chop the bacon into smaller pieces as so…
Cook your pasta as directed on the package…
Chop the garlic or use your garlic press and….
add the garlic to your 1/4 cup oil
Add the chopped bacon and cook 2-3 min until bacon is cooked but not crunchy..
Add the wine next…
Boil about 30 seconds, stirring….and remove from heat…
Drain the pasta but save 1/2 cup of the hot pasta water…
In small bowl, beat egg yolks…
You’re going to gradually add the hot water to the eggs while whisking to keep the eggs from scrambling..
It should look like this when all the water is added…
Add the pasta to the bacon mixture…
Next pour the egg mixture over the pasta and combine…
It will look extra yummy like this…
Add the cheese, salt and pepper next
Enjoy every last cheesy bite!
