I am definitely an organized person! I make lists, I have folders, 

I have calendars (much to the dismay of my daughter who states she hasn’t seen 
anyone use a real calendar in a decade),
 I have sticky notes galore….everything has it’s place….
 
but, this past weekend I feel as I have fallen into “organized chaos”! 
Nothing was where I thought it was–not lists, not coupons, not bills, not calendars….
I left my jacket at home and about froze to death in the “meat packing plant”–
I mean bank that I work in —
 (the temperature just makes it feel like we could hang meat on hooks!),
 
I made my lunch–it was in my hand–and I managed to make it to work without it! 
A sweet fella did chase me down and bring it to me–:). 
 It’s really hard to take care of the princess!
 
Anyway, I’m hoping to have a much better week with keeping myself in line! 
I’m looking forward to playing with my grand babies for a couple of days
 and then interviewing for a new position at work that I’m hoping to get. 
Keep your fingers crossed for me! 
 In the meantime, we’ll just cook some yummy food and bake till our hearts content! 
 
Any today, we’re going to spread a little spring sunshine into our lives today 
and make my sister Kathy’s Key Lime Cake. 
 It is absolutely delicious and so very easy. 
Kathy is such a great cook and she lives in Montgomery, AL. 
 I have borrowed many of her recipes over the years!
 She has many talents in the area of catering, creating beautiful wedding cakes, 
sewing beautiful clothing for her girls over the years, growing the most gorgeous roses 
and enjoying the most fun job of all–playing with her grandson Amos! 
Make her yummy cake this weekend and share with your friends and family—
it won’t disappoint!  
Kathy’s Key Lime Cake
 1 1/2 cups vegetable oil
1/2 cup orange juice
5 eggs
1 box lemon supreme cake mix
1 box lime jello



Combine cake mix and jello in mixing bowl…
Add the oil…

 

Pour in the orange juice next…this is sooo easy…
 Add eggs one at a time beating well after each one.
Pour into 2 greased and floured 9 inch cake pans.
Bake 25 minutes at 350 degrees until cake tests done.  
Cool for 10 minutes on wire rack and then turn out to cool completely.  Prepare the delicious frosting below.

Cream Cheese Key Lime Frosting
 8 oz cream cheese
4 key limes
1 stick butter
16 oz powdered sugar
 
Cream butter and cream cheese until fluffy…
Slice limes—squeeze and strain juice..

 

Pour into butter/cream cheese mixture…
Add confectioners sugar and beat until creamy.  
 
Add the zest of 3 key limes to the frosting. 
Frost and enjoy!
