My friend, Joyce, has done it again!
Knocked my socks off with one of her family recipes!
This was truly the best lasagna I have ever had—
with the strangest ingredients I have ever heard of…
You will just have to try it…delicious!
Joyce’s Famous Lasagna
1/2 box no boil lasagna noodles
2 rolls sausage
1 jar spaghetti sauce of your choice
1 can regular Rotel
1 onion, chopped
2 cloves garlic, minced
2 cans sliced mushrooms, drained
1 cup of assorted color peppers chopped
2 TBSP butter
1 cup heavy cream
4 cups Mozzarella cheese
1 cup shredded Parmesan cheese
Saute’ the chopped onions and peppers in about 2 TBSP butter
or olive oil for a few minutes until they are softened.
Add the minced garlic.
Add the sausage, the spaghetti sauce and Rotel.
Combine well and simmer for an hour on low.
When the hour is done, add the heavy cream
and mushrooms and stir well.
Layer a thin layer of sauce on the bottom of a 9 x 13 pan.
Place a layer of noodles on next.
Mix the Ricotta cheese with the egg until creamy
and place that mixture on the noodles.
Add 2 cups Mozzarella cheese on next.
Add another layer of noodles and then the remaining sauce.
Last, add the 2 remaining cups of Mozzarella cheese
and the cup of Parmesan.
Cover with foil and bake at 375 degrees for 45 minutes.
Uncover and bake an additional 10 minutes until all melted.
Let stand for 10 minutes before serving.
The delicious ingredients…
Saute’ the peppers and onions for a bit…
Add the garlic…
Stir in the 2 rolls of sausage…
Add the spaghetti sauce and the rotel….
Let it simmer on low about an hour or long enough for you to
run to Publix to get the mushrooms you forgot….
excuse me one moment…
After the hour is up, add the cream…
Throw in the mushrooms that you ran out to get…
Next, we will put it all together….
Place a thin layer of sauce in the 13 x 9 pan….
Place a layer of the no boil noodles next…
Mix the ricotta cheese with the egg until creamy….
Place that layer on next and throw in
a couple of cups of shredded mozzarella…
Layer more noodles….more sauce…then MORE CHEESE!!!
Cover and bake at 375 degrees for 45 minutes…
Uncover and bake about 10 minutes more
until its all bubbly and melty….
