Momma’s Fried Potato Cakes

When we have left-over mashed potatoes,
Momma loves to make fried potato cakes.

She take the potatoes..usually about 2 cups…
and adds 2 eggs, 1/2 cup milk and 1 TBSP of flour…

She then drops a good large spoonful into hot grease
and fries them until golden brown…

So very yummy!!

You can make some additions to the batter such as:
diced onions, green onions,
cooked crumbled bacon,
shredded cheese….
the possibilities could be endless!

Mix your batter and drop the patties into the hot grease…

Turn them as they brown on one side…

My sweet Momma!  🙂

Look at this deliciousness!
You’ll want to drain them on a wire rack or on paper towels…

Our delicious dinner of the Chicken Alfredo Pasta,
Joyce’s Stuffed Mushrooms (in a previous blog)
and Momma’s Fried Potato Cakes…
comfort food at it’s finest!
