Cheesy Chicken and Broccoli Over Rice Recipe

What a wonderfully warm,  delicious dinner to come home to on these chilly nights!
One of my new favorites!


  • 4 boneless skinless chicken breasts
  • 14 ounce can Cream of Chicken Soup
  • 14 ounce can Cheddar Soup
  • 14 ounces Chicken Broth
  • 1 teaspoon Cajun Seasoning
  • 1/2 tsp garlic salt
  • 1 cup sour cream
  • 6 cups steamed broccoli florets
  • 1 cup shredded cheddar cheese


Step 1

Put chicken breasts in crock pot.

Step 2

Whisk together chicken broth, Cajun and garlic salt. Pour over chicken.

Step 3

Cover lid and cook on low for 6 hours or on high for 3 hours

Step 4

Use 2 forks to shred into bite size pieces. Stir in sour cream and broccoli.

Step 5

Serve over steamed rice and sprinkle with shredded cheese.

The amazingly delicious ingredients…
In a large bowl, stir together and soups, stock and spices…
Pour over the chicken in the crock pot…
Cover and cook on low 4-6 hours…
Meanwhile, I steamed my broccoli in my steamer…cause that’s how I roll with my broccoli…
you can also just steam it in the microwave..however you roll with your broccoli is just fine…
When the chicken is done, remove from the crock pot and shred….
Add the sour cream to the stock in the crock pot…
Whisk well until smooth…
Add the broccoli…
Add the shredded chicken…
Place the chicken and broccoli mixture over some cooked rice…
Add some cheese on top and melt for 1 1/2 minutes in the microwave…
