We’ve been eating a lot of fresh veggies lately including zucchini…
It’s always just “ok” to me…but then,
I stumbled on this delicious recipe that completely transforms it!
I hope you enjoy!

Let’s get started!
In your skillet, add the butter and garlic…
Cook for about a minute…careful to not burn…
Add the sliced zucchini and carefully continue to turn them over as they brown slightly…
When they look perfect like this…
Add the lemon juice–fresh if you have it–from the bottle if not!
and the thyme…
and some salt and pepper…
Sprinkle the Parmesan on next…
Oh my!
I think it’s gonna be a new favorite for you too!

These potatoes were absolutely delightful!
You can serve them with any of your favorite potato toppers!
We used small potatoes, but if you have regular size, just increase the baking time until the potatoes are done.

The delicious cast of ingredients…
Cut the top of the potato like so…
Then with your paring knife, cut the potato in circles like this…
Then turn the potato over and cut like so all around the potato…
When you turn it over, it will now look like this!
Put them on your baking sheet and drizzle them with olive oil…
And sprinkle with sea salt…
and the minced garlic…
Bake for 20 minutes on 400 degrees…
Sprinkle generously with shredded cheese …
Yum!!!
and bake an additional 10 minutes…
they will them look crispy and amazing like this!
Top with sour cream, green onions and bacon bits if you’re lucky enough!
